 Q. What's your cuisine style?

A. Classic French with a touch of Italian and new American. I like fusing different cuisines into one meal, while keeping the traditional French and Italian techniques that will never go out of style.

Q. What inspired your recipe for chia pudding?

A. This chia pudding is one of our best creations. It has a nice creamy texture (but it’s dairy- free) and only has 200 calories. It’s vegan, gluten-free and has no sugar added. It’s perfect for those that are concerned about added artificial ingredients.

Q. What tip or technique can you give the home cook?

A. Use organic unsweetened cocoa powder or substitute cacao for a richer flavor and thicker consistency.


Recipe: Chia Chocolate Pudding

Serves 6

28 ounces coconut milk

¾ cup organic agave

1 cup dark cocoa powder

12 tablespoons chia seeds


Sliced strawberries

Sliced almonds

Blend coconut milk, cocoa and agave in blender. Remove from blender, add chia seeds, refrigerate and let sit for at least six hours. Portion into serving cups. Garnish with sliced strawberries and almond.
