B stands for Breakfast, Brunch and Beyond at the new Bistro B at the Westport Inn on Post Road East.
Bistro B, which replaces the Red Hen at the inn, is a companion to the Bistro B in downtown Bridgeport, which already has developed a following for its eclectic cuisine and wine selections.
The Westport Inn was "looking to partner up with a new restaurant operator that was multi-faceted," Steven Montello, the Bistro B co-owner, said of the impetus behind plans for the eatery, which opened in February.
"We were basically able to replicate what we have in Bridgeport to come here," Montello said. The menu of French-American inspired fare, he said, "is well-suited to the travelers who come through" the inn.
Plus, there are few other high-quality restaurants in town that serve breakfast, as well as weekend brunch.
"It's all fresh ingredients," he said. "We make everything homemade," including the potato gnocchi.
The menu, for instance, includes small plates featuring a choice of several salads, selections of cheeses or cured meats, raw oysters or pan-roasted mussels, BLT sliders, steak tartare and onion soup.
Main courses include spiced tuna steak, duck confit, double-cut pork chop, roasted hangar steak, seared salmon, potato gnocchi and Bistro B burger.
So far, the owners say, things have been going very well.
"And it's going to get busier and busier," said co-owner Brian Abel, who Montello credits for knowing the breakfast and deli side of the business.
"That's a strong part of why our restaurant is so suited for this location," Montello said. "It's just such good fit."
